Re: Bubs' Pale Ale

Post by philm00x »

So I brewed this yesterday but with a few changes. I wanted the malt flavor to come through a little more, while bumping the aroma from the hops up a bit more. In particular, I wanted strong melon notes. Belma was good, but it was pretty split between melon and strawberry. I decided to swap Belma for Huell Melon and BAM! Honeydew like crazy. Anyhow, here's what version 1.2 looks like:

Recipe: Bubs' Pale Ale
Brewer: Mr. Rufus Brewing Co.
Asst Brewer:
Style: American Pale Ale
TYPE: All Grain
Taste: (30.0)

Recipe Specifications
--------------------------
Boil Size: 3.03 gal
Post Boil Volume: 2.60 gal
Batch Size (fermenter): 2.50 gal
Bottling Volume: 2.25 gal
Estimated OG: 1.060 SG
Estimated Color: 9.6 SRM
Estimated IBU: 33.4 IBUs
Brewhouse Efficiency: 72.00 %
Est Mash Efficiency: 72.0 %
Boil Time: 60 Minutes

Ingredients:
------------
Amt Name Type # %/IBU
4 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 1 69.6 %
1 lbs Munich Malt (9.0 SRM) Grain 2 17.4 %
8.0 oz Caramel/Crystal Malt - 40L (40.0 SRM) Grain 3 8.7 %
4.0 oz Cara-Pils/Dextrine (2.0 SRM) Grain 4 4.3 %
0.20 oz Galaxy [14.60 %] - First Wort 60.0 min Hop 5 24.5 IBUs
0.20 oz Huell Melon [5.20 %] - Boil 10.0 min Hop 6 2.9 IBUs
0.20 oz Galaxy [14.60 %] - Boil 5.0 min Hop 7 4.4 IBUs
0.20 oz Huell Melon [5.20 %] - Boil 5.0 min Hop 8 1.6 IBUs
0.25 oz Galaxy [14.60 %] - Boil 0.0 min Hop 9 0.0 IBUs
0.25 oz Huell Melon [5.20 %] - Boil 0.0 min Hop 10 0.0 IBUs
1.0 pkg American Ale II (Wyeast Labs #1272) [124 Yeast 11 -

=======================

I removed the additions at T-20 and replaced them with flameout additions for a five-minute steep. This should eliminate a good bit of hop flavor so that the malt can come through more. Also, I am probably going to do a three-day dry hop with maybe a half ounce of Huell Melon to really bring that melon aroma out. I'm getting excited just thinking about it!

I've used Belma and never really got much fruit from it but Huell Melon is definitely fruity. But you can get some passionfruit flavor from Galaxy as well so I would think you did good to leave Belma.
I must have gotten some not so great Belma. Like Citra, you can get the good or the bad and never be sure which is coming your way.

Galaxy definitely has passion fruit in there. The pellets I got from the LHBS must have been really fresh because they smelled other-worldly!

I used Galaxy alone in a pale ale recently. I'll update my thread in the Advanced Recipes section later tonight.

Dry hopped with half an ounce of Huell Melon today. Those hops smell so damn good.

Added another half ounce of HM today. The sample I drew from the fermenter didn't quite have the strong aroma I was looking for so I figured I'd add another shot so that by Sunday or Monday I can go ahead and bottle.

So this revised recipe is fan-friggin-tastic! So much melon and berries in the nose. Even a bit of mango! And so easy to drink without any harsh bite from the hops. Absolutely stoked with it.

That looks like a great recipe. I love the pale ale.. Grain to glass in 3 or 4 weeks, and then even better at the 6 week mark.
