I'd call anything stored at cool to cold temperatures for extended periods of time cellaring.

Here's a bit about the brewery.

Keith made a name for himself as a brewer of strong ales and porter, as well as conventional ginger and spruce beers.....

In 1853 Keith's only son Donald became a full partner in the firm and the brewery name was changed to Alex Keith & Son.
