I'd call anything stored at cool to cold temperatures for extended periods of time cellaring.FedoraDave wrote:Do you count being in Davy Jones's locker cellaring?Dawg LB Steve wrote:Now that is what you call a cellared beer!

It's gotta taste better then the 2000 year old roman fish sauce they found in a shipwreck recently.

I don't know Jeff Halifax harbor I kind of doubt just "cool water" ever applies there...might be more like lagering
"Filled with mingled cream and amber
I will drain that glass again.
Such hilarious visions clamber
Through the chambers of my brain
-- Quaintest thoughts -- Queerest fancies
Come to life and fade away;
Who cares how time advances?
I am drinking ale today."

Re: 125 year old beer
Here's a bit about the brewery.
Keith made a name for himself as a brewer of strong ales and porter, as well as conventional ginger and spruce beers.....
In 1853 Keith's only son Donald became a full partner in the firm and the brewery name was changed to Alex Keith & Son.
.....brewing his famous India Pale Ale was his first love.....

Yeah, I'd try it. Just for the cool factor.
