Last bottle I tried was a lot more fruit then funk, but I liked it a lot - but it's been a few months since I tried one, so who knows now... Dawg is a guinea pig to see if anyone likes this beer besides me (I do know that she who no longer must be obeyed liked it in the past). But by no means expect anything truly funky, I highly doubt it will be. Just not enough stuff left in there for the brett to go wild.

I will get to it probably next weekend and let you all know. Been trying to kick kegs that are about to kick, to have room for the 2 not so session IPA's that are finished. These two finished @ 1.003, 150 deg. mash accounted for highr attenuation, both @ 6.5% was shooting for just under 5.0 %.

Got this done today. Wow 70 degrees in late December. How can you pass up a brew day? Things went well, beat the OG and think with all these hops, I'm going to lose lots of beer.
Prolly gonna use a secondary on this one.

Moved to secondary (first time in 2 years I've done a secondary) and added the first wave of hops. 5.5 gallons were in the fermenter and I only got 4.25 in the secondary. Wow, what a waste. It better be worth it!

This Saison Brett is a nice drinking beer, get a little bit of pineapple, minimal funk, spicy type finish, nice balance of malt, hop and yeast ( intended and un-intended ).

Glad you enjoyed it Dawg.

I've got enough of that Saison to send a couple of 1L "mr beer growlers" with you to the meet-up.

The English beer I sent you will be a lot more plain and boring after that one. But that's what it was supposed to be... like an old school English IPA (more about bittering then finishing hops, and with enough hop load to actually leave some vegetal tannins, none of those high AA fancy newfangled hops for "clean" bittering). You'll enjoy it more as it warms up a bit. I couldn't get my fermentation temps up high enough to get all the esters I wanted out of the yeast, so it came out kind of "clean", doesn't have the stone fruit I wanted. But I still like it.

Maybe it's because of the 3/4lb of hops in this beer? :whistle:

Seriously, that's a lot of loss due to hop/trub. Wow.

Well, this is almost gone but not because I'm drinking it. I bottled some to poison those going to Asheville and kept some bottles to see if it can improve. 2 of my friends love it and I don't understand why. I'm going to try this again and move the 30 minute to 15 and reduce the 60 minute to 1 oz (I think I did FWH but can't recall now) as it's the bittering part right away that I don't like and I like bitter.
It seems to finish ok like I wanted but maybe the mix of what I mentioned, and using SD Super Yeast, (or did I use 001) first time adding lactic acid and who knows what else caused this to be nothing like I envisioned.
So, instead of moving on to something else, I'm going to get right back on the horse and rebrew it until it's what I like because I think I need a good beer under my belt to feel good about brewing.

I can drink it but even for a hop head like me, I don't really want to. But I'm more curious as to how it could be so far off from what the recipe for designed for. I'm not perfect but most come out pretty close to what I design them to be.

Steve, I just call em like I see em and you'll get a chance to tell me (honestly I hope) what you think of it soon. Be very careful what you ask for! :o

More Hops Matter and Coffee Porter are in the box. Now I won't beat myself up on the porter because it's good or was before it started losing all the coffee flavor. Boy, that sure dissipates quickly. But it still has a decent flavor as of last night.
