got 2 batches to bottle...but the Gravity is still too high. Got a 3rd that's only bubbling for a little over a week. Nothing special, just a Red Nong and a Nong IPA

This one is a Berliner Cider-Weisse... a cider fermented with berliner weisse yeast blend, and secondaried with Ahtanum hops and grapefruit zest. Should be fun to taste this one around the holidays...

My first thought is - Gawd that's going to be (really really) sour unless you back sweeten it a bit.

Well, it will certainly be dry... And sour... Very tart at least.

Could stop the fermentation short so it doesn't ferment out as much... Or backsweeten as Mash suggests...

Don't think I'ld care for it without either of the above...

But is does sound interesting... Makes me want to do another Applewine or a straight up Berlinerweiss!

I will drain that glass again.

I am drinking ale today."

First brew of the year for me...

Belgian Summer IPA...

(Ok, look... It'll be gone before Spring, that's why I named it this way... 'Cause I know I will be doing this one again in two month!).

Anyway, recipe in a separate thread...

Bottled a 5 of Apple ale yesterday and bottled a MrB LBK of seasonal today with my brew friend that I worked with........He is still working, I'm not, I love it to be retired. Always thought it would be good if I didn't have to go to work everyday, but now I know, it is good....................Something for you younger guys to shoot for....................you would like it, but it takes a lot of time to get there.
