Long time peeper, not often poster...
Looking at getting a HERMS set up and potentially getting a 10 gallon HLT with internal coils to control my temps. I've seen other people that use their immersion chiller in a HLT to get the same effect but didn't feel like dealing with more hoses, blah blah blah...
Any opinions on which way is better or if it is really worth the investment? I really love wheat beers and feel that I need to do step mashes to get the quality that I want. I've done a couple of hefeweizens and most recently a weizenbock using single infusion and just feel that the beers are sort of blah.

I have no idea, as I brew pretty simply. But it would be cool if you could post some pics when it's done.
