I kegged my Czech Pilsner tonight. I displaced with CO2 and will let it "lager" in the fridge for at least 4 weeks before I start to carb this. Looking forward to a good summer drinker!!

No reason not to carbonate at any point while it is lagering.

Two reasons it's not on gas right now. First, I need to replace the little white washer in the gas line that seals against the regulator. The last one was in crooked and got pinched against the threads and become lodged. The second reason, and probably more important, if it's on gas and carbing, I'll be very tempted to start drinking this in a week. If it's not carbed, I can't drink it. So it's kind of a forced self control to let this lager for awhile.

Did a hydro on the Sour Patch Apple Cider today. Hit 0.994. Taste is very nice... a bit of horseblanket and pineapple to go along with the apple. Really liking this. Not sure how long I'll leave it alone. It's been in secondary for over three months (after one month in primary). I may give it a few more months.

I'm doing a 152 degree oven mash of 2.5# of Maris Otter, 1# of Vienna, 8oz of 30L, 4oz of Cara 8, 4oz of Carapils and 3oz of Honey malt.

I am going to boil it, cool it, split it up and freeze half, and keep half in the fridge for use in a few days.

I'm going to use this stuff as a PM base for some "Session IPA" like beers. So I guess I'll call this "Session Juice".

Why not just add the hops now and freeze them in ice cube trays with toothpicks to make frozen treats? :)

I'm gonna try to do a kolsch like beer. I know I can't do an accurate one using extract etc, but I have to use up this K-97 dry yeast.

Also since I am trying to clean up the older hops in the freezer, this will have 1 oz Spalt, which should be close to right, and a 1/2 oz of Palisade to get enough alpha to keep the boil short. (I usually do 10 minute boils) and then 2.25 lbs golden DME, some malto-dextrine to pretend I did a mash. :) I know it is a bit low ABV, but I like 4.5% beer. :)

So one batch of Faux Kolsch into the Fermenator:

I finished bottling a 5G recipe called Tax Relief Ale from Jaspers Homebrew. It's got an interesting description as you can definitely tell the author has a sense of humor.

Spring break, but the weather never cooperated. And the honey do list was too long. And my car broke down. But, I did get some yeast pitched into 2 G of cider today, so I'm calling it a win.

A fiver of Rye-Guy Rye IPA today. I changed the recipe around a little bit. The original recipe had both rye malt and flaked rye, but then I thought "Why bother?" and changed it to all rye malt. And I evened out the other grains, so I've got four pounds of 2-row and 4 pounds of Vienna. Half a pound of 20L rounds it out. BrewToad tells me this will come out at 80 IBU, so I'm really looking forward to this beer.

Brewing today what will be my first crack at a new style for me...German Altbier. Never had one, but sounds like a great beer. Worked up a recipe after looking over Jamil's recipes, a recipe in Gordon Strong's new book and of course the internet.

I have a Coffee Porter kegged as well as an Ordinary Bitter. I think both are about less than half full so it's about time to get something going.
