Re: Simply Simarello
Just got home after spending the week in DC and checked on this batch. It's finished at 1.015 so I'll end up with a 4.5% brew (1.050 OG). Nice.
I dry hopped this morning and will start the cold crash on Wed/Thursday for kegging this weekend.
Jeff, to answer your question, when I have time, patience and the room I like to:
cold crash, rack, warm back up to 65, dry hop, cold crash, keg.
This time, I'm dry hopping in primary for 3-4 days, then cold crashing and kegging. While I prefer to do the above method I don;t usually have the time to do so.
And with this batch, because I'm using my new SS Brew Bucket Mini with the spigot I'm keen to use that to make kegging a breeze (not that an auto-siphon is difficult). I can say that taking the hydro sample this morning was super quick and easy with minimal clean up which was awesome.
This batch smelled great already. I was actually tempted to not dry hop at all but since everybody seemed to like the recipe as-is I didn't want to mess with it, so I did the dry hop as planned.

Sounds like it's right on schedule. I'm glad you decided to dry hop it. Cause if you didn't, I would have had to come out there and kick you in the rear and slap some sense into you!!!!

I just got a great deal on a lb of Amarillo hops from a guy trying to get rid of 11 lbs so I took 1 off of him so this will be a summer brew again soon.
Can't wait to hear how it comes out Ron and Jeff.

It *was* tempting because it smelled so good already. I'm sure once the yeast drops out a good chunk of that aroma is going with it so the dry hop will be needed.BlackDuck wrote:Sounds like it's right on schedule. I'm glad you decided to dry hop it. I'm sure this will turn out good and you can bet on a bottle going your way Paul. After all, it was your recipe.
Re: Simply Simarello
I did this on my latest Pliny clone, results are mediocre to say the least. I've always kegged hopped this with great results. So with this SS I plan to toss in 1oz each of Simcoe and Amarillo for 24 hours, drop temp over 12 then keg 12 hours later with another ounce of each.Kealia wrote:Jeff, to answer your question, when I have time, patience and the room I like to:

I also plan to add some keg hops to my Pliny, lesson learned.
Will report back with results.

I gave this some thought on my 11 gallons of Drop Kick Nate so since it finished in 1 week, last night I dropped it down to 50 and will leave it that way for another 24 hours then back up to 68. Overnight it already started to clear very nicely. Since I don't have a heater and since it will take 2-3 days to warm up to 68 and since I plan to dry hop in about a week, I don't want to go to normal cold crash temps. But, based on what I've seen so far, with this semi cold crash, then dry hopping and a normal cold crash, I like this. I hope to see how much of a difference it really makes though this beer is not one where I will really be able to tell because its my first RO water beer. So, any changes good or bad will be hard to pin things on but, the great thing about this hobby is all the practice you get to do.Kealia wrote:Just got home after spending the week in DC and checked on this batch. Kegged this evening after 3 days of cold crashing. The smell is uh-mazing. Straight to the kegerator on gas now. Drinking soon.
There was a crazy amount of trub in this batch. Between yeast slurry, hops, etc. I left quite a bit behind but got every drop out I could.
The crazy part is that I had some PINK krausen marks on the inside of the fermenter. That's new......I'm not worried about it but thought it was interesting to say the least.

Re: Simply Simarello
Pink krausen? You guys on the West Coast do everything different.
Plan to keg mine tomorrow while brewing Levitation.

I found a bomber of mine in the back of the fridge I'm saving for 'band night'. I don't expect much as old as it is but it's homebrew!
Ron, I can smell it from here. Simcoe is the best hop ever. Well, that and Citra and Amarillo and Columbus and Cascade. Oh, I should change my name to Hop-lord!

Re: Simply Simarello
Ron,
That could be potentially hazardous pink krausen!
You must bottle and ship all of it to me as soon as possible to avoid injury!

Make no mistake, do not drink this yourself! Ship to me immediately!
