6 days later and it appears this Hansen yeast does the trick and is finished or damn close. Recipe says 1.013 and I have 1.015 but I'm in no rush to dry hop.
The taste test was probably the best tasting beer (at this point in fermentation) that I've ever had. Usually at this point for me it's not worth tasting but I opted to see what was going on and I was very pleased. Nice and clean, and just enough roast for me with a tiny bit of spiciness from the chocolate rye. Of course, way too early to tell anything more but if this comes out good, I'm on a roll and a happy RO man!

I think this is batch 3 with 100% RO and this time last year I was in a rut brewing average beers.
Look at me now talking positive about my beers.[emoji3]

Yes I am. But I'm pretty much rebrewing all my own recipes with RO. After Simply Simarello, I'm going back to More Hops Matter as I've really wanted to see what that can be like starting with scratch water.
Then I may go back to a few years ago and rebrew some older recipes that were good, just not great to see what they might be like.

We have pretty good water to start with around Lake Erie, but once I started adjusting my water, my beers have been noticeably better. Good to hear you're getting the hang of the RO water.
