I changed my recipe up just a bit. I went from 2 oz to 1.5 oz each on the first two additions. Then I used 3 oz for my hop stand. I hit my target mash temperature on the bulls eye for the first time EVER. 150 degrees. I have never had a brew day go as well as this one did today. That frightens me.

What times were those hops put in, I don't see that listed. I think you mentioned before you don't start before 15 minutes, right?
Those are some high alpha hops! I might need to find some of those to try.

1.5 at 10
2 at 5
3 for a half an hour hopstand starting at just under 170.

That should be a big hop aroma big hop flavor IPA, and I've never heard of Pekko hops before. For my Old Vinyl IPA recipe I used all late kettle additions too. And the aroma and flavor is unmistakably citrus, with an ever so slight hint of Munich in the finish. A perfect day brewing is well, a perfect day, good to hear that you had one.

With that flavor profile they should be pretty much universal.

Anyway from the hydrometer sample I can tell that Pekko hops all by themselves are everything you need in a really good IPA.
