I saw this on a YouTube Channel I like to get recipes from.
I did my own variation putting a little shredded carrot and diced cucumber on the rice and using marinaded Ahi tuna (cooked) with a dab of Wasabi for the meat.
The clerk at the store asked if I was making sushi and I said I was making seaweed tacos (with a brief explanation). She commented that was "deconstructed sushi". After eating them I would say that is a great explanation. Teriyaki chicken would probably work as well.
