On a thread about Belgians on the late, lamented, MrBeer Forum, I asked for a simple recipe. Another member, (Mashani I think? Gymrat?) suggested a Brewtoad recipe called Simply Saison. I drank the first bottle today. In spite of using old extract and making a hop usage error, the beer is very good. I did correct the hops in the fermenter, and it worked. The Danstar Belle Saison yeast produced a very Belgian flavor, even though I fermented in the 70s. My wife kindly said that I'm on a roll. (A John Sand-wich!)
So, thanks for the advice. Please remind me who posted the recipe.

Not that I'm taking any credit for it, but this is coincidental. I'm currently drinking my first attempt at a saison, the recipe for which I got from Homebrew Academy, and which I called Suddenly! Saison. I made it because I got a packet of Danstar saison yeast at the AHA conference in Philadelphia back in June.
Anyway I don't care where you found the recipe; I really, honestly don't. I only care that you got a good batch of beer out of it, same as I did. I'm liking saisons now, and want to make more. And I will. Oh yes....I will.

Yes PapaG, that's it! Thank you. I changed the Hallertau to Saaz, but I didn't use enough water for the hops. Accustomed to the MrB instructions, I only used a quart. Realizing after, I added a little more extract to a quart of water and 1.5oz Fuggles (I have lots of Fuggles) for a thirty minute boil. In the fermenter, it tasted pretty hoppy. At bottling, more balanced. Now, quite Belgian with a lovely color. Thanks again.
