A couple of reasons. First, it helps keep the bag off the bottom of the pot and from burning (though that's not really a concern).
I use to remove it after removing the mash but realized it kept a ton of funk from going into the fermenter so I kept it in.
I'm ok with it but your're right, BIAB'ers don't need one.

Thanks for the update. Did you stir and agitate while cooling? I think the site suggests that.

Sure did, I did more stirring than moving the chiller around.
There are so many coils that you could probably let it sit and it would still work pretty fast. Can't wait until the water temps get in the 50's though it doesn't stay that temp too long here.

I propose that you use ice from the get go, but sounds like it works as advertised. thanks for the update

I've thought about that but 15-20 is not a problem for me but I did order a new, larger pump and will test that out next time.

When I was using a copper chiller, I used ice from the get go and 15 was the quickest I could get the temp down. I could only imagine with that beast you could get it down in 10 min.
