Planned to do this summer, but Sunday (tomorrow) I'm smoking. A nice big bacon wrapped fatty and 4 racks of ribs.

The Fatty is 1 lb ground pork with rub mixed in, cream cheese and cheddar and diced peppers wrapped in 2 lbs of bacon, a little honey bbq sauce in the middle to keep it moist. The ribs have all the same basic rub, but when I finish them I will do it with different styles for different taste. Going to use Apple wood for the smoke and Apple in the water pan and Apple for a baste....it's that time of year for apple...... A Heart attack meal coming up.... :)

My neighbors will get some, they seem to come around more often if I'm cooking or have brewed something and it is ready :)

That all looks so good! I gotta plan for when I can smoke again. I got two racks of ribs in the freezer that I planned on doing Labor Day, but it didn't work out.

Thankyou, it held together good for the cook and later slicing.
The middle daughter has the tats, she was helping me put the rub on the ribs.
