I'm smoking the turkey again this year

Mom is hosting the meal, because she has the most room, but since she's 88 years old (but looks much younger!), she's not doing anything other than just keeping her door unlocked. No problem; we have a family full of good cooks, and we're more than happy to all pitch in and provide whatever various dishes are required.

So I'm gonna brine it tonight, then let it air dry (in the fridge, of course) overnight Wednesday/Thursday. I read that doing that helps make for a crispier skin, which I haven't achieved. I think I've also been keeping the temperature too low. I'll aim for 300 this year, rather than 250, and see if that helps.

I should still have plenty of oak chunks, but if not, I've got other wood I can use. No worries.

And I've got some homebrew to contribute, as well; King Duncan's Holiday Porter, Copperbottom Lager, and South Ferry Steam Beer.

Which end do you light? :) It gives a whole new meaning to "pass the turkey"
I'm not cooking this year. We're going to Princeton NJ with Jane's family. I am bringing Jack Be Quick Pumpkin Ale, and the last of the three year old Belgian Strong. I had planned to bring a Rye PA, but I finished the keg.
Making beer and stew for the Zombie Apocalypse.

Hope it's good! I tried a couple times but always came out too dry so I gave it up. One of these days I'm going to try to deep fry a turkey, I hear that's good eating.

Deep-fried turkey is good eating! My favorite way is to rub it all over and inside the night before with Tony Cachere's creole seasoning. That's all it needs. IMHO it's worth it to get an electric turkey fryer. I've done it in a 40-qt pot on a propane burner but the electric model uses much less oil and is far safer. And can be used indoors. I usually fry a turkey after Christmas when the fam gets together from out-of-state. My nephew's request.

^^ That sounds good, I've also heard that it the deep fried turkey is very good, but never tried it. mmmm, I'm already getting hungry.

I find that fried turkeys are only good while they are warm and shortly after removing. The next day all the grease is into the meat and it just doesn't taste as good to me but that's just me.
But coming out the cooker, it is yummy!
