Now I did it! A forced ExBeeriment
Sunday's brew was kicking well and 007 usually finishes fast but now I've gone and done another stupid thing! Age is sure sucking for me lately.
This morning I checked on the blow tube to make sure it was clean (it was, fermentation was slowing) and I checked the temp and obviously, touched something on my Fermostat that set it to drop the temp!!!!!!!!!!!! It appears the freezer was on all day!!!!!!!!!!!!!! The blow off jar is almost frozen and the temp said it was 31 though the beer is not frozen. So, I'll use this as a learning experiment, open the lid, raise the temp overnight (hopefully) then check the gravity and maybe add more 007 if needed.
Question: since the beer isn't frozen, it shouldn't be ruined, right? I don't have a heat band so I plan to try some things to warm it up and I should have a better idea soon but surely there are other idiots in this group that has done something similar, right? Jeez, what a complete dufus I am. I need to quit work and retire so I can give my beer the love it deserves.

Just turn it back up...
And either leave the chamber open or take the fermenter out into room temp until everything is stable...
Then, put the fermenter back in and continue fermenting under temp control.
All will be fine!

My half Italian heritage caused me to put 2 candles in the keezer (with the lid open a bit) and it already warmed it up a few degrees in the last 45 minutes. I took a refractometer reading and it looks like its at 1.017 and not too very far from 1.012 but alas, opened further inspection I saw a large 'beerburg' of ice in the middle. Frozen beer ain't what I'm looking for but there's no harm in letting this run this wacky course.
Wow, I'm sure glad this isn't heart surgery!

I haven't over chilled mine. I haven't used 007. I have let US05 ferment too cool, and been punished with permanent fruit flavor. On the other hand, I've accidentally let 3787 go to 84+, and still had great beer.

I had that *accidentally* happen myself one, or a few, days. I chilled it down after fermentation and half of it froze.... yup, by accident. I drained off the remaining stout and bottled it. It was ok, strong as heck, one beer was like drinking a 6 pack I swear. My experience, if fermentation was done, warm back up and bottle, or bottle what's not frozen.
Life is short, live it to it's fullest!

Dude!!!!!!!!!!!! I worked so hard on this batch.....had to drink homebrew.......had to bond with my buddy Charlie the lab.......was FORCED to eat turkey, kale and yams and then had to sit out in AWESOME weather and finish more beer. What did you do?Beer-lord wrote:Sunday's brew was kicking well and 007 usually finishes fast but now I've gone and done another stupid thing! Age is sure sucking for me lately.

I did call this beer 'Odd IPA' so it's obviously living up to its name!

I have never frozen beer I my fermenter before, but I have frozen bottles of beer in my freezer (quick chilling gone wrong because brain got distracted, so find a beer a week later in freezer).
Those frozen beers were perfectly fine once thawed for whatever that's worth.

Got it to get up to 62 overnight and I was fermenting at 64-65 so I'm close. I noticed some krausen on the top but no airlock activity. Maybe I'm good, maybe I'm not but this experiment keeps rolling on.
I'll still continue the dry hop (7 oz of hops) with the hope that none of this is wasted and is done for the act of beer science. Years from now I'll write my thesis on cryogenic fermentation techniques and you will all be standing in line asking me to autograph my books with my Beer-lord stamp!

Shouldn't be, the process is well documented here.Beer-lord wrote:Whatever I'm making, it will be next to impossible to duplicate.

So, are you asking for some? I can send you the whole lot if you want. Just add dry ice and ship it to you!Inkleg wrote:Shouldn't be, the process is well documented here.Beer-lord wrote:Whatever I'm making, it will be next to impossible to duplicate.

I would think the beer will be fine, as long as you add a new pitch of yeast... I hope it turns out ok for you.

I'm going to check the gravity tomorrow and see where I am. If it is 1.017 or lower, I'm not sure adding more yeast will make much difference if I'm looking for 1.012 but I do have some 007 saved that I can add if needed.
Also, I'll do a taste taste just to be sure it' doesn't taste funny before I add the dry hops.
