I wasn't quite setup to run heat in my fermentation chamber, it was still set up for cooling so when things got too cool I pulled the fermenter into the house and temps got away from me, as high as almost 74*. So fermentation character got a bit rough, there is some esters I don't care for from S-04 and it has an off character that is not all that tasty. I like S-04 but it needs to do it's thing around 64-66* and then it creates a nice bready, English character that I really like in a Bitter, or at least I remember so. It was also mashed too low and it seems under hopped and kind of thin.
I dont' know, I guess I can give it some time to see how it comes around but I'm not too worried if it doesn't...I won't be out but a few bucks. We had plenty more to drink, the guests I had over drinking knew I brewed something and they tried some sample glasses of it but it just wasnt all I hoped it to be. It did kind of taste rushed, very young and it just didnt' come together as planned.
