Re: In which The Hat has an Epiphany
I might lean toward what Screwy has done with his 420 Special Wheat; clean US-05 type ale yeast with the citrus flavor/aroma coming from coriander and bitter orange peel.
Drinking: Columbus Double India Pale Ale
Bottled/Conditioning: Trippel
Fermenting: Columbus Double India Pale Ale, Trippel

Re: In which The Hat has an Epiphany
That's more or less what I was doing before, Rebel, and I wasn't pleased with the results, although that may be attributable to the Citra hops I was using at the time. I think it conflicted with the coriander and orange peel. I was going to do my next batch with Hallertau to keep the hops influence a little less prominent in the hopes that the coriander and orange peel would come through more.
I may still do that.
I think I'm over-thinking this.
Take it one batch at a time, Dave. You can't evaluate beer you haven't tasted.
