Butcher cutlery * Chef Experts
Looking for some sound advice regarding kitchen Knife cutlery from the borgs experts of Chefs. We need a nice set of butcher knives that will stay sharp and last forever (obviously as long as they are handwashed and blocked)...we don't want to spend big $$$$$ but know we will spend some decent cash for a good set. What say you and thanks in advance.

I saw an impressive set of knives on TV. It was Ron Popeil's uncle Larry that was demonstrating them. He sure made them look good. I think I saw him toss a tomato up in the air, and after a few pivots of his wrist with the knife in his hand, all the tomato fell into a bowl and it looked like pico de gallo. Plus, if you buy a set, you get one free, so you'll have my Christmas present out of the way early this year.

Hi T8r, if you have a good restaurant supply store there that is the place to buy, they sell to good stuff to "the trade" not the hyped up crap from a department store.
I've got a set of Dexter Russel Sani-Safe knives that are I don't know how old and they are great also get you a professional diamond sharpener, mine is a Russel SS-01.

How much are you willing to spend?? My SWMBO & I bought our knifes many a year ago. She still has some from culinary school!!! My knife kit is pushing the 20 year mark. Basically cheap stainless will not hold an edge for long. I mostly have Wusthof. I wish the dam government would stay out of food service. Carbon steel is much better but can not be used professional because it may harbor bacteria if not cleaned and maintained properly. If you shop around you can get a good knife around $75 and up. Do not be surprise if a knife cost a $150 and up. A couple of the other chefs at work have spent over $3000 for a knife kit!!!
As BB showed make sure you have a good steel for touch ups. Remember a sharp knife is a safe knife!!

And I just saw the pic I posted that is all lighting and cheap camera, the blade is not brown. These are good if you can still find them and there are a bunch of different styles for what you need.

Thanks for the great advice and responses...wasn't sure if I would get any replies but this really helps. We would probably be comfortable in $200-$300 range and to know they would last if taken care of properly, hold an edge or comfort felling in cutting, chopping , slicing and dicing. Thanks crew

I have the Ron Popeil knives at home because I am a cheap cheap man, and $50 got me all the knives I could ever need for a while. But they need some care to stay usable for long.
At work we use mostly Dexter knives, they are very solid, built to be abused, but this is NOT a flashy looking knife. Henckels would also get my recommendation.

We just got a set of the Henckels steak knives and love them. Sharper than alot of other knives we have that we use for food prep and such. Got them at kohls for about 40 bucks I think.
