Excellent. I don't see Sandor Katz falling into the "kettle sour and then kill the bugs dead" mentality. If anyone is about living bugs being good for the body and soul, and therefore should remain in your beer, he's the man. He got me into making my own kraut and pickles and kimchee.

Looks like a great day Swen! I took 5 different sour beers of mine to Big Brew Day yesterday and we kinda had a mini Funk Fest.
