I got a problem today. I took out of the fridge a pack of Omega hef yeast this morning and first time for using Omega. I can't find a date on it anywhere, so I looked back and seen I ordered it from Midwest May 1. Its been in my fridge. I want to brew a hef Thurs. or Fri. so I made a starter this morning with wheat LME. I usually use DME for my starters but didn't have any so used some old LME I had. I make a 1 L starter and use 1/3 lb DME and get around 1.038-1.042. I tried to convert it but came out low so I added more and ended up with 1.050 so I went with that. Pitched at around 75 and put it on my stir plate on low. It keeps blowing the cover off, so I turned the plate off and still did it, so now it's in the fridge and thinking what to do next. any ideas?

You have any 1 gallon glass cider/juice jugs or something similar? You could sanitize one and then move the starter into one of those. Your stir plate might even stir it if the jars bottom is flat. Otherwise just swirl it once in a while.

I believe you are using a "true top cropping yeast" there.

I've made this Hef before a few times using wyeast, but decided to try the Omega this time around. The pack is about the same size as the wyeasts smack. a 100ML slurry. I put the numbers in the yeast calculator I've been using and said I needed more and have been having good results on pitching more yeast lately. Well anyways this took off way more then what I have been doing...... It will work everything does.......most of the time.. :)

Wheats are usually one thing I don't pitch quite as much yeast in. Not that it will turn out bad, but you might lose a good bit of banana pitching a lot of yeast. But if you let it get really hot then maybe it will all work out just fine.

Either way, leave some headspace friend, that stuff looks like it will need it.

WOW that is some healthy yeast!! From the looks of the starter it will definitely need a blow off.
