It was between 1 minute and flameout, but they were right out of the freezer and the lid went on immediately so none of the aromatics would have blown off into my air. I had to put the lid on and let it stay on until steam starts to pour out the foam stopper to make sure the lid/stopper is sanitary since I was slow-chilling it. (I sanitize ahead of time, but this just makes sure any airborne brett that got on it between then and when it went on dies).

On Saturday I brewed Levitation for the Xth time - I can't remember how many times at this point and I'm lazy so I didn't pull my notes to count.
I'm looking forward to having this one on tap again soon.

I bottled the "English IPA" I made in the Mash & Boil with partially Burtonized water. It is very English IPA like so I apparently did something right.

Brewed another IPA/Hoppy APA in the Mash & Boil with 5# 2row, 4oz honey malt, 4oz c15, and 2oz of Cryo Simcoe. And I'll dry hop it with some Citra and maybe something else later. I'm using Lalamand ESB yeast in it since that's what I have on hand, so I mashed this at 147 so that it will ferment out more. That ESB yeast will not ferment out as fully (compared to S-05, Notty, etc.) if you mash at 152 unless you use sugar.

Will be kegging a Mosaic/Amarillo/Simcoe 5% Pale Ale this weekend. Loads of late and dry hops. Love this combination.

Yea, that does sound good. I make a session IPA with Simcoe and Amarillo which is awesome. I could see how Mosaic would play nice with those two.

Hey guys, haven't been on in a while. Haven't brewed much this year and when I am not brewing I just don't pop in much. Still sitting on about a quarter keg of spiced cider I made in the fall and an Oatmeal Stout I made around Christmas. Last batch was an American Pilsnsr kind of thing and I'll be drinking that for a party this weekend.

Just wanted to stop in and see what's goin on around here.

I bottled the ESB that I used South African hops in, it tasted pretty nice, I'm sure I will like it.

Fermenter was a mess due to the yeast making a really hard krausen ring, so it's soaking in PBW overnight.
