You could steep the orange peel in some vodka and then add that later.

Kegged these today. The Westmalle finished at 1.011, the Saison at 1.004. Both samples taste good. I had been worried that the wheat didn't convert or that the old Belle Saison had stalled, because it finished in about three days. I guess I had nothing to worry about.

Well, it's been two years, so I guess I can update this thread. Both beers turned out alright, but not great. I put them aside. At some point I needed a 2.5gal keg and dumped the Westmalle (I think) Right now I'm low on homebrew, and conveniently I recently chilled the Saison with the idea of giving it one more chance. It's on tap now, and my wife likes it. It has definitely changed over time, and improved I think.
