Bottled my Winter Steam beer this morning. Kind of a cross between a California-Common and a Winter-Warmer. Can't wait to try one. The sample tasted so good I was compelled to drink the entire hydrometer sample!

Just got done brewing a simple extract batch of a Blonde Ale.

05 yeast is pitched and everything is cleaned up and ready to go for the next brew. I love the smell in my basement after a brewday.

Tomorrow I'm packaging up my Irish Red Ale. Going to bottle half and keg the other half to have on tap for the upcoming holiday dinners. This beer tasted so good the other day when I tasted the final gravity samples that I can almost taste it whenever I think about it.

Brewing a winter warmer. Smells good up in here!

HOME BREW RECIPE:
Title: Winter Warmer

Brew Method: All Grain
Style Name: Holiday/Winter Special Spiced Beer
Boil Time: 60 min
Batch Size: 2 gallons (fermentor volume)

STATS:
Original Gravity: 1.061
Final Gravity: 1.017
ABV (alternate): 5.99%
IBU (tinseth): 35.44
SRM (morey): 29.08

FERMENTABLES:
3 lb - United Kingdom - Maris Otter Pale (62.3%)
1 lb - Belgian - CaraMunich (20.8%)
0.25 lb - American - Caramel / Crystal 40L (5.2%)
0.25 lb - American - Caramel / Crystal 120L (5.2%)
1 oz - American - Chocolate (1.3%)
4 oz - Belgian - Special B (5.2%)

HOPS:
0.18 oz - Magnum, Type: Pellet, AA: 13.5, Use: Boil for 60 min, IBU: 27.03
0.36 oz - East Kent Goldings, Type: Pellet, AA: 5.8, Use: Boil for 10 min, IBU: 8.42

MASH GUIDELINES:
1) Temperature, Temp: 154 F, Time: 60 min, Amount: 6.5 qt, Strike temp = 167

Chocolate Stout all tucked into bottles, fermenter clean and sanitized, Coffee stout boiling happily on the stove. I like making beer. And Christmas. And my family. And sharing my beer at Christmas with my family.

Bottled my second attempt at Pumpkin ale, I really liked the first one but I wanted to tweak it a little. I used homegrown pumpkins this time instead of canned, and hit the spice tea a little harder when I racked to the secondary. Bottling taste test was good but always hard to know the final outcome by that.

Brewed John (FIT) and my RCE..English IPA..historically(sp.) correct from what we found. Smells great...seems a little darker than what software predicted. Too bad I could not get it done sooner to have for the holidays.

Dry-hopped a batch of Double Black IPA with Amarillo & Simcoe hops. I was a bit late on this one, looks like it already finished fermentation; OG: 1.086, FG: 1.010! I'm pretty sure it will be a mighty fine brew; even at +/- 10% ABV, the hydrometer sample was really delicious with a slight roasted flavor from the dark malts.

Kegged my Nashville Breakwater Pale Ale today. Had some trouble with the keg out post but managed to do some engineering to fix it. Will bottle in about 3 weeks then send to Swen to hold with Well Fargo until we get together to share them all.
