Third consecutive day bottling: Homemade Ginger Beer! I am a cocktail fanatic (particularly the classics), and one of my favorites is the Dark and Stormy. Good ginger beer is difficult to find in this area, so I decided to attempt my own. Preliminary samples are promising. If they carb up well, this will be an enjoyable springtime treat on its own or in cocktails. Fingers crossed...

One ounce of Columbus in at 60. 12 more ounces to go in the boil. 1 each of Amarillo, Cascade and Simcoe at 15, 10, 5 and whirlpool.
Then 2 ounces of each for the dry hop.

Oh that little thing. Certainly not something I'd drink even if I had no beers for 10,000 miles.

So........ remember this Sour on Raspberries.

Was going to check it today anyway to see how it was coming along. Well all the fruit had fallen to the bottom, good indication it had given it's all. Put 3 gallons in my Sour bottling bucket, dissolved 70 grams of table sugar in about 1 cup of water and hydrated 1 gram of Red Star Champagne yeast (this is insurance for carbing in a decent time as over a year the Sacch yeast is kaput) and gently stirred it all together.
Ended with 30 bottles, love the hydro sample, can't wait for this to carb.

I then went and checked my Saison Brett. FG has not changed in a month and really can't tell the taste has. So this went into a keg and on the gas.

I had planned on bottling the PacTiki Pale Ale yesterday, but I had to work longer than usual for a Saturday, and I got a cold that hit me that afternoon.

Brewed a 2.5 of Great Scott 60/- this morning, and planned on bottling the pale ale this afternoon, but I just don't feel like it. Still suffering with this cold. I'll have to make sure I get to it in the next day or two.

Pacific Jade hops, which is from New Zealand. I thought the combination of the beginning of Pacific and the name for a New Zealand good luck charm was kinda catchy.

Set a new personal record yesterday: fourth consecutive day bottling homebrew. This batch was an "Apple Pie" hard apple cider. This was an experimental batch in that I used pre-flavoured juice instead of adding my own spices as is my normal procedure. The local grocery market received an influx of Old Orchard brand Limited Edition Apple Pie Cider "with a hint of vanilla and cinnamon" back before Thanksgiving. They had such an enormous surplus, I knew that with some patience, it was only a matter of time before I could snatch some up at a discount. Sure enough, shortly before Christmas, I walked in to see a "buy one get one free" event. The bottling sample was still quite flavourful, so perhaps after a bit of aging, this will be a keeper.

I also brewed my first batch of 2015 yesterday: my very first Mead. Attempt one is a simple, classic mead with Clover Honey. Honey, water, and a little yeast nutrient. It was kind of like cider-making - putting it together was so easy, I almost feel guilty...

Got the PacTiki bottled this evening. I didn't really feel like it, but since I'd dry hopped on Thursday evening, I didn't want anything funky happening with the aroma. And, as usual, once I got started, I actually enjoyed the process.

A great many firsts today: My first beer brew of 2015! My first partial mash ever! My first grain crush using my new crusher! My first Jalapeño Pale Ale! Wow!! :wow:

LOML and I fell quickly and completely in love with a local brewery's Jalapeño Pale Ale. [ http://birdsongbrewing.com/web/our-beer ... und-beers/ ]. She insisted that I try to replicate it. How could I deny such a request?!?

Bottled Das Cascadian.

Will likely brew up some Maibock this evening. EDIT: Yup I brewed it.

Congrats on all the firsts lindseywinstead.

I just kegged my Amarillo Pale Ale.
It will stay warm conditioning for at least two weeks while I make room in the kegerator for it. I haven't had a beer in 5 days now (for a number of reasons) and that isn't helping me empty a keg to make room! At least my second co2 tank will come in handy to carb it in the meantime.
