Paul allowed me to taste a sample yesterday.......I was blown away. He says it needs more time but what it needs is a pint glass and my lips.
It's smooth for a fairly high ABV beer, has a consistent taste and not overly bitter but has ALL the aroma I like and doesn't fight going down. IT's not overly carbed, not too aggressive and again, is just an all around great beer.
You guys did a great job with this recipe and idea. And I'm hoping to reap the benefits.

Hey, lookee here Chris, I just found a new beer name to put a recipe too. Wonder what that one will have in it?

If you keep coming up with the names, I guess I'll have to keep coming up with the recipes. Waiting for this to carb/condition in the bottle is really killin' me!!

I'm giving it another week of carbing before I bottle them. I'm going to have a small one tonite, tomorrow and Sunday just to be sure I've done due diligence to my brethren........the Disciples of Hops (formerly, the 3 Amigos).

maybe my best beer brewed to date. Not something I say easily because I am my toughest critic and I honestly think I have so far to go to even be average.
Of course, I have to give Chris serious props for the recipe but I've had great recipes before and they were just so-so. And, this is the second beer brewed in my SS Brew Fermenter and both are extremely. I swear in front of all of you that if the next few come out this good, I'm going to buy another SS Fermenter and go without to pay for it.
And, I have to also think that the GigaYeast may have played a huge part of it. Talking to the Brew Dogs last night, James just about hugged me when I mentioned how important yeast is to beer and it's flavor and he told me the yeast is where so many homebrewers fail and fail miserably.
Enough about me but after my fusel life months ago, I'm owed a few self back pats.

I think we are starting to cause bad ju-ju on the beer. I just talked to Chris and he's excited too but it's all a hoax, an April Fool's joke. There is no beer as its not brewed yet. Guess I'll have to go buy some good craft beer, remove the labels and caps, put mine on and send them out to see what you guys think.
Ron, I'm gonna wait until the Dr. Hoptagon clone is ready then send you one of those instead.

It's been on the gas for one week. Smells dank and tastes of grapefruit. Still needs to carb some more and settle, but man is it good. Great job Chris.

You guys and your kegs are killing me. I think I was the first to brew this one and I'm still waiting to drink mine. At least you guys are telling me that it's really good. So I'm sure the waiting will be worth it. Today is two weeks in the bottle. I think I'll put one in the fridge today and taste it in a couple days.

OK, I just reminded myself this is a 9% beer. This does not drink like a high gravity beer. This is a smooth easy drinking IIPA, with no alcohol heat. This beer could get folks in trouble.

No worries Chris, soon you will come to the dark side.
With my experience, mine won't hit it's prime for another 2 weeks, 3 weeks total on the gas. So time wise you and I are in the same boat in that respect. I could force carb it and it might be ready sooner, but 38* at 12 psi for 3 weeks works for me.
