So I popped one open today. I'm ecstatic with how this turned out, flavorwise. It's still way too early to have allowed this to carbonate fully, but the flavor is fantastic. Aroma is ok, but you can smell the grain more, which I really like. The Belma hops have finally started to show the melon character that was described, and play very nicely with the notes of passion fruit and pineapple of the Galaxy hops. Finishes deliciously malty, like caramel monkey bread. I think this might be the best beer I've ever brewed!

Russki, I am very glad I followed your suggestion for the hop schedule. Thanks again for that. Also, I'm glad I did not dry hop this beer, because I love how mellow it turned out.

I've decided I need to keep this beer on permanent rotation. I'm here sipping on one while brewing, and I just love the flavor of the beer. It's not too bitter, the malt is not too sweet, and the fruity notes are fantastic. Fortunately, I still have some Galaxy hops left so I might be able to brew another batch of this soon.

Bought grains and a packet of US-05 to brew this again some time this week. It went out so fast, cuz it was just too good!

Trying out a new hop spider I bought with some birthday Amazon gift cards on this batch. Preboil OG was spot on like my first go around at 1.051.

The spider worked great. At first, it seemed like it wasn't allowing boiling wort into it, but it's just that adding the hops into the confines of the hop spider cooled the wort in that particular area for a bit and then it started rolling again. I'm probably gonna hang it on the bucket as I pour my wort into the fermenter, too, so as to strain any break material out.

Lol. Nice.

Anyhoo, 1.059 OG on this batch, so just a point off from estimated. So my technique is pretty consistent, I'd say.

Bottling this today. Finished at 1.010 so it came out exactly like the first batch as far as ABV goes, 6.4%. Minus 1 on the OG, but minus 1 on the FG too so the difference in gravity is the same. Sample tasted very pineappley like the first time around. I imagine it'll mellow out to the strawberry/melon/passion fruit notes like it did after carb and conditioning.

I had one of these with dinner last night for the first time since getting competition results on it back in March. I was down about drinking it because it wasn't a great score (not a 20 but not as good as I hoped for) and the judges comments about possible infection or poor ferm process. I had those judges' notes stuck in my head and subconsciously felt the beer to be crap. I've finally realized that even if a judge says the beer isn't a perfect specimen of a particular style, if I thinks it's good, then that's what really matters. The strawberry and tropical fruit notes were awesome, and the beer went down so smooth.

I'm Phil, and f**k what judges say, I brew good beer!
