I measured gravity today and it's at 1.007. Estimated was for 1.012, so it's a lot drier than anticipated. Flavor in the sample tasted minimally of pineapple with a strong tartness. In the back of my mind I can't help but think that the beer may have been oxidized, but it's hard to tell whether the tartness is sherry like flavor or just sourness from the pineapple. If it doesn't end up as fruity as I hoped, it'll be enjoyable and refreshing for the summer I think. I'm gonna let it sit till Friday to see if gravity changes and bottle if it stays put. In the meantime, I pulled the pineapple out of the beer.
