make sure you check the date. Your LHBS may not have that high of a turn-around. I often yeast that is right at the end of it 6 month life. I have had the owner just give these to me. He knows that I can step it up. Any way one at 6 mos might just give you the stressed yeast if you are still doing that. Also some Weissbiers yeasts are actually blends to give you that tartness. If you use one that does have a bacteria in it you should only use that fermenter for brewing sour beers.
