Ended up going to a different homebrew store and getting a 3lbs of white wheat and 3lbs of Pilsen.
I did some research on Berliner Weisse recipes and want to start simple, I'm going to add more base malt to my mixed up bag in the future and brew a heavier beer.
I figured it was worth the drive and 13 bucks to get the right grains and start from a simple base. My next one I will add some biscuit malt and see how it affects the flavor so I can begin the journey of learning how ingredients affect my beer.

On consideration I think you chose wisely. My first couple of grain batches were simple experiments, which worked out well enough. Since then I've brewed batches close to proven recipes. Then I have a standard with which to compare.

My pot is making some weird noise as it heats up, it's like someone is repeatedly knocking on the bottom.

Probably some moisture on the bottom burning off on the stovetop. No biggie. Just keep an eye on the mash temp and turn up the heat if needed. Good luck!

Yeah it was fine lol, sounded like she was gonna blow up haha.
Now it's cooling....slowly....should I take off the lid?

Great job! Did you throw in some uncrushed grains into your mash after it cooled down a bit?

Yeah, though the temp was like 10 degrees different between the bottom and top of the pot, bottom was way colder since it was immersed in ice water. Was probably around 128F on the top when I threw in the unmilled 2 row. It's funny since I changed the base malts to pilsen and wheat instead of 2 row and wheat, now it has a handful of 2 row on top lol.
I checked the temp this morning, it's holding at 110F which amazingly is exactly what I wanted. I think it smelled a bit sour...though it may be my imagination....
