Re: Coconut IPA part 2-Uh-Oh

Post by Beer-lord »

Kegged 2 weeks tomorrow but not chilled in the kegerator yet, I decided to see how things are before adding the keg portion of the roasted coconut. I am still getting both aroma and a slight taste of alcohol though I don't think I can feel any heat.
I'm thinking things aren't great but as I has room, already gone this far and haven't had time to brew, I'm going to add the coconut to the keg, let it chill for another week and see where it takes me. It seems drinkable but not much flavor. It's hard to tell warm but I already know this isn't as good as my last one.
Now that I have a freezer, I'm very sure I'll be redoing this again very soon to see if I can get it right with the right hops. I guess it's possible I used so many hops I'm not familiar with that it might be giving the taste buds some funkiness. But, my gut feeling is that something isn't right and not much will change when all is said and done.
Hey, at least once a year I have to mess up a batch.

Maybe roast up a little more coconut and 'dry nut' it in the keg for a couple of days...?

That's exactly what I'm doing and what the recipe calls for. 12 oz at flame out and 12 oz in the keg for 7 days. I'm going to do about 18 oz in the keg and see where that gets me.

Remember when I said I lost my O-ring for my corny keg lid that fell into the bottom of the keg? Even though it only had food grade lubricant on it and it was star sanned, I wonder if it could be kicking off some funnies in this beer. What's the chance that it's doing that? Might never know I guess.

I think the beer gods are telling me something about this beer and I'm not liking it. So, after the first corny lid rid fell in and I put a second one on while it carbed, I went to add the roasted coconut today and the second ring fell in the keg! DOH!
I simply put yet another one on. I don't think this beer is going to be good and hope I'm so wrong I won't even look in the mirror but I am changing the name of this beer to CocOnut O-ring IPA!

No wonder it doesn't taste right - you've got two rubbers in there!

I think you officially Swen'd this beer.

Paul, have you read this thread and tried this method?

There are links from this thread, but it sound like the consensus is that you want to:
- Use 1.25lbs per gallon of beer
- Add to bright tank (equate to cold crashing)
- Leave for only 48 hours
- Use shredded, unsweetened coconut and do not toast it

If you have, ignore this post. If you try this and it works, you can always :give:

No, I followed Ryan Reschan's recipe. Both times before brewing it, I contacted him and he went over my recipe and I followed his advice. It's unsweetened coconut, 12 oz at flameout and 12 oz once the keg is carbed for about 5-7 days. But, 1.25 lbs per gallon of beer? Hmmmm, doesn't sound right to me. And why not toast it? I believe the reason to toast it is two fold. First, to remove as much of the oils as possible and two, to give it a nutty flavor but WTF do I know other than I did things better the first time.
I don't think that was my problem this time as I did the same thing as last time (which I was very pleased with). For the hops used, you'd think you'd know it but you don't.
Not sure when I'll do this again but I've seen that thread just recently but thanks much for passing it on.

Poured a hazy orange color, very pleasant to look at.

Aroma: Hops and coconut + a hint of gasket

Taste - I'm not getting the the fusel at all. Maybe you're a super-taster for it or maybe it's something else, or maybe it conditioned out, or maybe it was never there......

My kegerator where I was keeping this was running a bit cold so as I let it warm up just a bit the coconut became more noticeable. It was never dominant nor overpowering, but it was there once you either let it warm or knew it was in there. It added a nice layer of complexity to the beer and the hops. I'm not sure if what was left on my tongue as an aftertaste was from the coconut or just the bittering addition but either way it was nice.

Paul, I'm not sure what this beer tasted like when it was younger, but it's a nice coconut IPA right now.
At 7% it's a bit stronger than I drink most days so I have to flush with some water before cracking something else. 49ers are playing Sunday Night Football after all - it's more than a 1 beer evening. Especially the way the game is starting. :(

I had some from the keg today and the coconut is waning quickly. I know pick up some hops though absolutely no aroma. It's a shame as there a lot of hops gave of themselves for this beer.
Hope your team does better than mine....I no longer own one.

Thank You Paul, I enjoyed mine tonight.

As you can see, looks just like Ron's. Well except he has a fancy smancy glass. :p

Aroma: Not much cold, but as it warmed the sweet smell of coconut caught you in the nose with each sip. I detected no rubber phenols, so that O-ring must have conditioned out.

Taste: Yep no fusels here either. Cold it had a harsh hop bite the wasn't there after it warmed.

Well there went the last sip. Overall a well brewed beer with no brewing flaws detected.
For some reason, the second half of the glass, as the beer warmed was a better beer. If that makes sense. Overall a very enjoyable beer.

Thanks and it is a bit better warm but its nowhere near as good as the one last year with the wrong hops from the original recipe.
I still get a funny, slightly alcohol taste and it only 7%. That's not high enough to give it an alcohol flavor, but I'm glad you enjoyed it.

I'm drinking this right now. I have to say that this one is a bit different for me. The first one was much better. I don't know, it's just weird for my tastes. I'm getting a little of the coconut, but I'm also getting something else that just isn't sitting all the great on my palate. Maybe it's the funny alcohol taste your getting Paul. I'm getting it in the aroma also. It's just not my favorite. Sorry Paul, just being completely honest.
