fwiw the wort will still be over 200 degrees, seems like that would kill anything you put in there.

I think they will sanitized as you say. I'm going to do this by the recipe but back off the spices by a third. I'll save the package and add more at bottling as a tea if needed.

I'm leaning towards using the remaining LME as the basis for an IPA. I've got a ton of interesting hops in the fridge. Maybe the leftover English Medium Crystal can be used in an IPA?

The crystal is fine in an English style IPA or an East Coast style IPA. (not so much West coast style).
