When I first started kegging, I think I was drinking keg beer very early but I do the 'set it and forget it' method so it takes 7-10 days for carbonation. But, it's not that the carb is bad nor a bad taste but, I think that it takes much longer for my kegs to clear therefore, taste better than it does for my bottle beer. Whereas I get a very clear bottle in 2-3 weeks, it seems to take 2 weeks longer for clarity and I do believe that the settled beer is much more enjoyable though I am routinely drinking newly kegged beer 1 week after they go in the kegerator.
Since I brew mostly hoppy beers, I do believe the amount of hops are just taking longer to settle out. My stouts and darker beers don't seem to take so long. And again, the beers are not at all bad early, and I think my tastes have become much more particular now that I take apart every beer I brew.
