Welcome to the forum!

Most of us like hard cider too, there are some pretty darn good recipes floating around on here. I just finished a nice cider I let age 1.5 yrs. Best darn cider I've ever had.

I haven't done a cider but over at another board there is a thread about a Stupid Easy Cider that gets good reviews from cider folks. Maybe worth a look?

You don’t like beer... Odd, but OK. :) But wait, you’re from NW Georgia? The only real, honest-to-goodness Moonshine I ever had was from there. My uncle gave it to my dad, who gave it to me when I was in college. It was tasty... different.

I’ve had a couple ciders that bombed and one that turned out really well. Good luck, and have fun riding the learning curve!

Thanks everyone. First batch started today, just the forbidden fruit kit from BrewDemon to cut my teeth on. I've been doing my research and already have some Lavlin EC-1118 yest that I might use on my next batch. Still doing a lot of reading yet. Happy Brewing

Professor - Thanks, I'll at that to my notes

Alb - Moonshine is fairly easy to get here and I've had good and bad. Now that it's semi legal, you can buy it at the package stores, though most of it is crap and naturally none that I've seen goes past 80 proof.

24 hours In and the BDC I'd happily burping away so I'm guessing that's a good sign.

That's a great thing. That means the yeast are happy and doing their job.

almost a full week in and I gave it a little taste test tonight. Has a good flavor, but is certainly weak/watery. So I tossed a post in the "other" section here and hopefully someone can suggest a way to punch it back up. Fermentation is slowing down and I figure that since this is my first batch, it won't bother me to experiment with any suggestions to save the batch. So just in case the "other" section is not on the the most read list for anyone, if anyone reading this has any ideas, please fire away. Thanks

After fermentation starts, it is what it is. Keep the wort at 65f or so for 3 weeks and 4 weeks in the bottle @ room temp(in the dark). You'll be pleased with the results.

Thanks Jim, I'm perfectly willing to give that a shot.
