This afternoon will make day#4, but I won't be back until late evening. I went ahead and bumped the controller up from 48 to 55 degrees before leaving for work this morning. It'll take awhile for it to slowly creep up to that anyway.
Then I'll just wait and see how long it takes to finish and drop out.

9 days since brew day.
7 days since first sign of activity.
This thing is really winding down. I'll continue to let it sit at 55 degrees until next Sunday. Sunday, I'll keg it up and slide it into the kegerator... no gas. I'll let it sit in there another 2-3 weeks before carbing it up.

Because I'll drink it. I know me.
Nothing at my house ages while carbed.
Also, I want to give the yeast left in suspension full opportunity to do whatever if they feel like chewing up a little last minute yeasty magic. It's like a secondary and lagering while sitting in the kegerator waiting for CO2.

Eh, attenuation issues continue. This one finished at 1.007.
OG 1.052 (a bit big for style)
FG 1.007 (a bit low for style)
5.92% abf ( a bit big for style)
Oh well, welcome back. I kegged my last beer in October '14. Gotta get ready for brew day tomorrow... Oktoberfest. I know, more than a little late for this one.

Rebrewed this today and slowed my lauter WAY down. I came out with an OG of 1.057 instead of the usual 1.052.

That Wyeast 2206 gets more and more attunative with each generation. I usually try to finish a batch of this yeast with a really big beer.
