Today was keg day. The final gravity came in at 1.007. Hit both the OG and FG numbers right on the money for this one. Remember how clear the OG sample was? Here's the FG.
I want this one ready a week from today, so I'm going to force carb this. 30 psi for 24 hours, reduce to 20 psi and hold for 24 hours, then reduce to serving psi, which is 12. Hopefully it works. Other wise, I'm coming after someone!!!ANTLER BREWING

This has been in the keg for about two weeks now. This is a good recipe, it's an easy drinking every day beer. Just like a cream ale should be. There is a slight sweetness, most likely coming from the honey malt. I can't really pinpoint the rye malt, but I'm sure it's adding something to the overall flavor.
Oh, and it's crystal clear. Here's a picture in front of the Christmas Tree. The naked cat is on the back-side of the glass and it comes through clearly and looks like it's on the front of the glass.

That is one nice looking pint of beer! Did you pitch both yeasts at the same time or staggered?

I'm still brewing this recipe! Pretty much stuck to the original version, have done as an ale, was good but is soo much better with both yeasts. Had not brewed for a bit as my brewing/lager freezer had died but replaced it last year and brought this recipe back to life. It's a house staple, rare is the time when I don't have this one on hand. I have one in the freeze chest now, first time doing as a total lager. I know it will be good but not as good as originally designed. Next round will be exact recipe. Either way, is still rocks, love it!! Shame the RCEs no longer run, it was fun.
Side note, I re-read the whole thread and saw that JJ had posted on it. I miss talking to that guy.

Tapped this last weekend, dayum!! Yea, ya need to put this back on your list. I think after this, I may do as a straight lager from now on. This is the best is has ever been and they have all been great brews. It's a lot more work to do as a lager but this batch has convinced me to do it this way from now on. I just can't convey it enough, damn good!!!
