Well, authentic Nashville Hot Chicken doesn't have any hot sauce involved in it, so the Louisville places might be doing it wrong if they are dousing things with hot sauce... It's all about cayenne and other pepppers, along with some other ingredients, made into a paste (using oil or lard) or alternately applied as a dry rub. Ohhh... I need to get some hot chicken tomorrow... ;)

Good to know. I just know what I see on food network. Maybe they are doing it right. Haven't had it, so I don't know. I'm sure I'll give it a shot some time, and when I do, it'll be a local place or in Nashville. :)

Agreed. Also, just as a point of interest, while the rest of the country may call them "Buffalo wings," the residents of Buffalo just call them "wings."

Because wings is wings. That other stuff ain't wings if you're a Buffalonian.
