Decided to let this sit till next weekend. Will batch prime between 180-199 grams OR 6.35-7.02 ounces. I'd like to cold crash this, but kinda out of fridge space right now.

Ah yeah, cause if I bottle with 199 grams AND 7oz then we have bottle bombs and NO party.

Well isn't that strange, because one of the 60 bottles I just put away had your name on it. I'd never heard of a beer named Dave before now. :lol: I'll be doing the BdG in a few weeks.

I went with 180 grams of cane sugar for 2.8 volumes. I have really begin to enjoy this style since trying a Saison Dupont. What I brewed has a nice tart/hay/barnyard/white pepper taste to it.

Now the next question. With the reading I've done on this, looks like the let it sit for quite a while, to be ready for when the farm hands are in the field. I'll try one in four weeks(because I have to) and have no problem letting it sit 6 months. Any suggestions on time?

Sometimes they are really good even at a young age, but they can stand up for as long of a conditioning time as you want. My last BDG truly peaked - as in all the flavors just totally blended - around 6 months, but then did not degrade as it aged and it was just as good at a year. Stronger Saison's are similar, they stay tasty even with long aging, unless they are the hop forward kind. Lower ABV saisons I crack at 3-4 weeks, and then just drink up and make more! Hop forward Saisons are like IPAs, as in the hops will fade to the background a bit if you let them get too old. That doesn't make them bad though, just different, as it lets the yeast flavors come through which are good too.

Got around to brewing the Biere De Garde today. Changed the BdG recipe on the first page to reflect what I used. Note to self.....account for 2 liter starter....
So I have about 6 gallons in a brew bucket...and then pitch a 2 liter starter...does not leave much head room. Put in the blow off tube and shut the door, I'll clean up later if need be. I don't know the first thing about this yeast, but I'll find out. Updates along the way.
I'm calling it 1.079.

Sure is purdy!
The beer I kegged today was so high in the ale pale, I had to take out the air lock and put in a blow off tube. It literally only had 1.5" of head space in it.
