Looks good guys! Depending on how much I get into this, I would like to have two BrewDemons going at once... and keg into 2, 2.5 gallon kegs for my kegerator.

I started kegging with 2.5s and picnic taps. Now I mostly use 5gal kegs, but the 2.5s are still useful for seasonals and experiments.

That's the spirit! Careful, though, it spools out of control before you know it!
I started with a single Mr. Beer LBK. Now I've got two five-gallon carboys (with a 5g secondary), two 2.5g carboys, three 5g kegs, and a 2.5g keg for my keezer! I keep all the carboys going in a three-week rotation throughout most of the year. And yet I still can't keep my keezer full.

Looks great. Is that a 2.5lb CO2 tank?

No... I have used what I have around the house to finish out my kegerator. That is a 20oz CO2 tank from my son's paintball supplies. I have a 50 lb CO2 tank and refill station that allows me to utilize existing supplies. I designed and 3d printed a spacer to accommodate the smaller tank. Everything seems to be working just fine and my wife is happy that I am not spending extra money to get a new CO2 tank.
