I have no problems with spice beers as such, but when I make them I at least try to follow some semblance of order. As in I have always based them on old world pre-hop ales, and use the types of herbs/spices that were used in them back then.
IE someone who doesn't like "pumpkin ale" would still quite possibly have liked one of the Holy Roman Empire style Belgian Abbey beers I made. They didn't really taste strange, the herbs used provided bitterness and flavors that you could get from various types of hops, and each herb was used in small enough quantities that they just blended together and nothing smacked you in the face.
But carrots... nope.
