As I rule and as a matter of convenience ... I ferment for three full weeks ... then package.
One thing I've learned ... refrigerated wort's shelf-life isn't always three weeks.

Best to freeze the wort a day or two after chilling the trub ... then set out to thaw on packaging day.

My experience is if you boil the wort it will last a bit longer in the fridge.

However, I still freeze any that I'm not using in a week or two.
