Water does evaporate faster in drier climates and slower when humid. I definitely lose more water in the winter than the summer and add a bit to compensate for that.

Now THAT's a nice idea. My mail box is large enough to accept anything from bottles to cars, and all in between. :banana:

Yea, I'm sure that by the time this big, wide pot is left open for an hour, it's going to lose at least a gallon to a gallon and a half so I'll have to steal one of paul's successful recipes and do what he did and then take credit for it.

Looks like I can't brew until early Oct......so I hope the weather's nice and I have a nice day to brew.....and some help.

Ink you forgot one, barometric pressure. The are formulas on the net to figure it all out. I have noticed that I have a much higher boil off rate in the winter than in the summer. Our avg humidity is high in the summer, low in the winter. Even lower when the wood heat is on!!

The size (diameter vs height) and type (material composition) of the pot impacts boil-off percentages as well.
