Checked the gravity on my Dead Guy Ale today. 5 days since I brewed it and it's at its projected gravity and already starting to drop clear. I need to remember to wash and re-use this PacMan yeast for other beers. I forgot how much of a work horse it can be. It finishes fast, no off flavors, is pretty clean and neutral and flocs out nicely.

Cold crashed my Edmund Fitzgerald Porter clone (tastes great) and brewed my Ring Your Bell Brown, a clone of Bell's Best Brown.

Kegged a batch of Anniversary IPA, dry-hopped a batch of Heretic Evil Twin clone with Citra & Columbus hops, & brewed up another Cream Ale; this time using some flaked rice instead of flaked corn.

Bottled my Funky Farmhouse Ale tonight, 1.066- 1.005 FG. The last Saison for this summer. Love Belle. Now on to brewing some winter beers, but I do want to do one more wheat brew maybe this coming weekend.

I'm gonna make an LHBS run this morning to get the ingredients for the next two batches, one of which I'll brew this afternoon (or evening, since there's an important Subway Series game on at 1:30). So today, it'll be a 2.5 batch of South Ferry Steam Beer, which I intend to enter in Homebrew Alley X next February. And with that, Fedora Brauhaus will be back to capacity, all three carboys full!

I had to run to Wally World this morning so I grabbed three 96oz bottles of apple juice. I dumped that into the LBK and pitched a packet of 05 on it for some SEC (Stupid Easy Cider). Total Brew Time ~ 15 minutes

First attempt at brewing a Dunkel. Thought it would be great in the Autumn if it ever cools down here. Once again, because I don't have the equipment to lager, I'm doing this as an ale using Dusseldorf Alt yeast WPL036. I've had good luck using this in an Oktoberfest fermenting in the low 60s. I did a three step mash to try an get a nice malty profile. We shall see in a month or so.

What are you brewing/bottling?
Just finished my first ever keg job. Thanks to everyone here that helped with some of my questions that I had over the last couple of weeks. It's in the fridge and on 10.5 PSI.
