I want to brew a porter next, have Monday off.... but school has been really tough this year with all the new things we are putting in place, plus taking a night class.... I was way to bust trying to do my second to last (I hope) yard clean up. Called the LHBS at 4:59 to ask what time they were open till.... 5:00, closed Sunday and Monday... Damn... have to wait until next Friday...

Bottled up the MOFF Diver this morning. 9 12 oz bottles, and it tasted fantastic, despite the problems with the brewing.

This morning I brewed Peanut Butter Oatmeal Stout and St. Valentine's Cherries in Honey. Due to a) rushing and b) having a crazy last few weeks, I messed up a few things - used the 1lb of LME for St. Valentine's in the PBOS, leaving the 1/2 lb for the PBOS, and started to put the Honey Malt in the combined steep of Carafoam for both. Realized it within seconds and withdrew it and steeped it by itself.

I've now learned, after two tries, to NOT attempt to use one steep of Carafoam to then split into two batches. Nothing but screwups follow.

I thought you had to mash honey malt. Not critiquing, just asking. Do you get much when you steep it?

Honey malt has decent diastatic power, but if mashing it is best to mash it with the help of base malts. On its own, it can be steeped to extract some flavor and color, though there will be some small amount of conversion.

It has as much as Munich and I have mashed Munich as 100% SMaSH and made good beer. So I'm sure you can get it to fully convert in a PM on it's own if you want. (I would not make a honey malt SMaSH even if it will convert LOL).

Anyways, OT, I bottled my Cherry and spice infused Dry Chocolate Stout. It tasted good out of the fermenter, which actually surprised me... I am in uncharted territory here, not sure what I'm going to get.

I attempted to brew a Black IPA, but #&% went wrong. Something is in my fermenter. Only God knows what it will turn out to be at this point.
