Welcome, Wollfy! As others have said, you will find a wealth of information and many different opinions as to what works the best. See what works best for you. Personally, I use Mr Beer or Brewdemon HME's as a base, then add DME, steeping grains and boil extra hops for most of my brews, with an occasional BIAB all grain thrown in. For me the 2.5 gal size works the best so I can try many different styles more quickly. I currently have about 10 different beer styles ready to drink. However it does take the same amount of time to brew 1, 2.5, 5, or 10 gallon batches. I have 3 Mr Beer fermentors so when I want to do a 5 gallon batch I just use 2 fermentors.
Anyway, I think with time you will find the best method for you. Welcome to the obsession!

How did u split up the hops boil? An ounce, this might be one serious hop bomb that even I would admire!

I like hops the saaz seems real mild to me. I hope it turns out tasty.
