Here's the goods so far. Gravity was at 1.011. Color was really good. Taste was surprisingly not as bitter as I thought it was going to be. But then again, it's hard to tell what it's going to be like at this stage....at least it is for me. I dumped all those hops in. :banana: By the way...my guess on bottles is 46.5.

Notes say mine finished at 1.012 and only got one bottle, but it was a BIG bottle. :)

Very nice indeed. That's a nice low FG, for sure.
I can only imagine what it smells like with all those hop bags open right now.

What did you do to get it that clear? I have never had a brew that clear in a hydro.

The only thing that I've done so far was the addition of one whirlfloc tablet for the last 5 minutes of the boil. And the transfer was done through a good strainer which was placed inside a paint strainer bag, so that kept a lot of crap out of the bucket to begin with.

Hmmmm, just rack the Pliny to secondary, only down to 1.020. Once again, it's a bit high though I do have 2 weeks to go. I bet it doesn't get to 1.013 like my recipe says. Guess I have to go back to Beersmith and change some more settings.

I checked your Pliny thread Paul. Could not find the answer, so I'll ask here.

What temperature did you mash at. What did BeerSmith say your starting temp should be before putting in the grains.

I'm just trying to understand why you keep getting high FGs and see what's up.

Thanks for trying Jeff....I mashed at 152 and BS shows 1.072 for a OG and I gott 1.075. For the most part, I've been getting a higher OG at the same time I'm getting a higher FG. It said to mash in at 160 degrees and I mashed in at 159. I kept 151-152 for 70 minutes.
I definitely feel it's an efficiency setting though I've tried changing it a few times with very little difference. Other calculators I've used have pretty much the same mash in temp and water volumes as Beersmith.
Tomorrow's another brew day so I'll see how that goes as well. Thankfully, it doesn't seem to be messing with the taste of my beers.

That's what I have also. Water at 159 and mash settled at 152.

See this is where it gets weird. My OG was 1.077 (was supposed to be 1.072), but mine fermented down to 1.012. Now I did pitch on half of an 05 yeast cake from another beer.
What and how much yeast did you pitch?

I pitched 2 liters of 05 that was on the stir plate 36 hours and the yeast was from July. The weird thing is that this didn't happen with my 9 gallon pot and only started when I started using the 15 gallon pot.

So the starter was showing good activity?
