Wow...that really is a simple recipe. I can't imagine any reason that wouldn't make a clean, crisp and tasty beer. Thanks for posting the recipe.

This is 10 gallon of wort in a 15 gallon pot. I now have two Ale Pales with 5.5 gallons in each. One pitched with Notty and will be kegged. The other with 05 and I'm thinking of racking it onto 5 pounds of strawberries in 2 weeks. So for 2014 I've brewed 11 gallons, not a bad start.

Holy Guacamole!!! I achieved a mash efficiency of 92.8%!! Is that even possible? I triple checked my numbers to make sure I wasn't crazy, but I'm still thinking I may be crazy. I had targeted the lower end of the OG range for the style in anticipation of getting better than 72%, but that was completely unexpected. The only SNAFU of the day was that I forgot the add the Whirlfloc. Not the first time I've done that. I can see large post-it notes in my future. Hopefully the clarity won't suffer too much.

Overall, I'd say a pretty good brew day and a great way to start 2014.

Sparging on Sacré Chat Dubbel right now. Hooray 5 gallon pot! I can boil full volumes now w/ no fear of boilover! Plenty of room!

Just bottled & labeled Apocalypto 4 - 9.5 ABV - This brew tasted fantastic at bottling. Apocalyto 5 is in my new "Big Mouth Bubbler" glass fermentor. Happy New Year Beer Brothers.
