I have six full and untapped cornies ... and just about done with bottled inventory. All my bottles (hundreds) will soon be empty. But, I will be bottling the seasonal MrB HME's and other HME's from LBK's from time to time. Bottling is fun, but it just takes too much time ... and rinsing each bottle after use is a PITA.

I don't know how many has already read the article over at MB, but they did a "great hop test". Sameuald did a good write up on it. It's worth looking at.
they did a hop boil in water and one it 1.040. they dry hopped for one & two week periods. A lot of the end results actually backs up what we've found out with our research and what we've been telling people.

Well, they had to come up with something to try to keep ppl reading the site. It's not like we all stayed there to continue helping the noobs after the great MrB-Coopers Eff up! It's a rotten shame it took *most* of us doing a major exit for them to actually pay attention to the forum and contribute anything besides their usual threats when they don't like what we post. May they vanish in the way of the Dodo bird.

True, it was a monumental muck job with the site, but yet, information is information. I really don't want to slap someone up side the head for doing a good job. It's worth the read.

I seen and read it and it was a good read, I think they are trying to do what they should have been doing all the long, helping us brewers and they didn't. Just relied on us until most everyone left and now they need some discussion.

Hey. Let's face it. guys; Mr Beer doesn't exist to sell beer making information. They exist to sell beer making products. As a company they're not out anything by our leaving. Very few of us bought or used their products at a great quantity after all. Fortunately, we're not out anything either. In fact I'd say we came out on top with Louie making this fabulous site in which none of us are beholden to any corporate sponsor of. But I, personally, do feel sorry for Samuel D and Diane. They were/are great people and I miss them.

Staying home from work today. Had hurt my knee yesterday playing softball and it's a bit swollen and hard to stand on. Ice packs and Advil are well stocked.

No worries, Jeff. Yeah, they'll take care of me today, hehe. Just not right now cuz Maya and him are sleeping at the foot of the bed while I watch the news.

BPG, thanks, and that's the plan! I'd really like to develop a nice fruity Belgian tripel after reading the thread about beers to brew that should age for some time. Was trying to find a clone recipe for Straffe Hendrik's tripel, to no avail.

My take on it is:

Westmalle yeast
Saaz (flavor /aroma?) and Goldings (bitter and maybe flavor)

The problem is: Which six malts are used to yeild the lightly colored 9% ABV treat?

Probably Pilsen, some white wheat, a touch of light caramel, maybe a bit of 6-row... Belgian CaraPils or maybe substitute CaraFoam, but in what percentages... Hmmm...

Just musing here...

I was playing around with BeerSmith, and I would like to use the harvested Ardennes 3522 yeast I have from the pale ale. Will have to make a few steps worth of starter to make sure I have enough yeast, but using Belgian pilsner, Belgian 2 row, C20, and carapils, I have a 9.4% brew that seems pretty tasty. Also includes feeding a pound of cane sugar after primary fermentation.

I had looked at the BJCP guidelines for the tripel, and it made no mention of wheat, but I've seen quite a few tripel recipes on Brewtoad that use wheat. Is that something typical, or a new modern take on the style?
