Sipping on the first pour of my Simply Simarillo Session IPA. Oh, how I’ve missed this beer. It’s so good.

I actually thought about Simply Simarello today and think I'll brew it sometime this summer. I don't know which version I want to do this time and may do a mix of both to see how it turns out.
Its so simple it's hard to believe how good it is.

I like the session better than the high test version. It's so good you just want to drink the hell out of it. And since it's below 5% ABV, you can!!!

I would clearly like this better too, without ever having it. Because that's how I like my beer.

Meanwhile I'm drinking the last of the funky Maibock aka German Farmhouse Ale.

My Walking Dead IPA, it didn’t come out with quite the red tint I usually get with c-60 but oh so good. 7 oz hops in the boil and 2oz dry hopped 8.3 ABV but you would never know it - well you would after having a couple...

Real Trappist Beer from a can man.

It's heresy I tell you.

I was going to have a Born Yesterday but the bottle wouldn't balance on the glass.

In the last two days, 38 different beers. Mostly tasters, but yokes - I think I sprained my liver.

I'll post more after some sleep, but let me leave you with this: I had so many good beers on Saturday that when I ended up at Russian River Brewery that night.....we passed on getting some fresh Pliny on tap!

The pipeline is a little low at the moment, so I stopped on the way home from work (hey, I had to put gas in my car anyway) and bought a variety pack of Saranac beers.

Saranac makes good beer, and I've already enjoyed a Gen4 session IPA and a Legacy IPA.

Mighty tasty.

The All Grain Kölsch I made in the Mash & Boil.

So, this is the best tasting Kölsch I have ever made. Ever. I really mean Ever. It is like the real thing. It is a bit cloudy because I don't use gelatin (vegetarians ya know) and it's only 3 weeks in the bottle with a powdery yeast that doesn't drop out fast. By around 8 weeks it should be a lot clearer. But I don't care either way, because "Es ist fabelhaft!" as is. There is no way I would make a beer this light colored with even a PM with MoreBeer pils when using the little bit of Munich and the pinch of honey malt I threw into this, even if I subbed some sugar it still wouldn't be even close to this pale. And this was boiled for 100 minutes. If I did that with extract it would look like a British pale ale.

This beer also had 7oz of acid malt in it, so my fear of acid malt being able to be tasted is now gone diddly-on.

I'm starting to really fall back in love with AG brewing because of the Mash & Boil making it so easy for me. Yes it takes a long time, but mostly I am just ignoring it and working or working out or what not while it's doing its thing and since I'm not sparging the 3 gallon BIABs, and also because I've been slow-chilling, it's still saving time. Slow chilling certainly did not hurt this beer, it's awesome.

Rye Guy IPA. Nearly 33% rye malt in the grain bill. A nice bite. But so tasty.
