I brewed a winter ale back on 12/30/13.

I started with this English Winter Kit from my lhbs but I added 1 lb. of Dark DME and Dark Brown Sugar and got an OG of 1.070. I also adjusted the hops up to 45 IBU. I took a gravity reading of 1.021 tonight, so I'm going to give it a few more days.

It tasted really good. Plenty of clove, cinnamon and hops up front, with a more malty finish.

Yesterday I brewed up a Pale Ale with Great Western Pale 2 Row Malt. There are CaraPils and Crystal Malt also included. For hops, I'm using Mosaic; a first for me. Everything brewed up great, but the initial color was GREEN! GAH! Too much hops I guess.

After an hour or so in the carboy, it cleared to a decent amber color. The Mosaic is looking good with some decent fermentation already.

I bottled a new version of my Ginger Witch on the day after Christmas. She's a beautiful Red Ale with enough (I hope) Ginger in it to make you stand up and salute.

Bottled half of the Flying Dog Doggie Style Pale Ale clone. Tasty, great scent. Fermented all the way down to 1.007 in a cold basement. Gotta love US-05.

This cowboy is Back in the Saddle...1st brews of 2014 and NOT the last. First plunge was a simple concoction of TBM Golden Lager HME boiled for 20 minutes to kill whatever was lurking inside the bag and to definitely changeup any hop profile they put in there and did a post install of one can of Ol' MB GBCP HME and pitched 7.5 grams of Coopers Brewers Yeast for a 2.5 gallon batch with a OG = 1.072 (added a bag of booster for some reason).

Second batch was a MB GBCP (2 cans) and a bag of booster for a 2.5 gallon batch with OG = 1.048. Got a lot of refills to brew with expiry dates this year and I haven't brewed since Fall 2013...need to Chevron Pipeline rebuilt for this thirsty soul.

BTW, Happy New Years 2014 BORG

Brewing up a Hazelnut Brown Ale this Saturday...Special request from my dad actually. Supposed to be pouring rain here in Pensacola on Saturday, perfect day to be in the garage on the pilot system brewing.

Let this cowboy ride///brewed 2 more batches yesterday getting the pipeline re-built. Brewed a Beach Blonde Bombshell with a can of new CMB Canadian Blonde, bag of booster with 6 ounces of frozen limeade concentrate added after boil (not sure how it will end up) but sounds refreshing nonetheless.

Then with the fire burning on, I brewed up a batch of New CMB Northwest Pale Ale with a bag of booster added to it. Only thing common between the 2 batches was splitting a sachet of 15 gram Coopers Brewers Yeast (7.5 g each batch) ...seems to both having a slow start to ferment as I am using my garage (55*-60*) as my ferment room. They are a churning finally but just happy to get some brewing in while I am home for a couple of weeks, bottling then leaving to Texas for 3 weeks.

Salud...T8r out

cant start anything until I find a place to live in march. one of the joys of renting... stupid owners who tell you they want a long term tenant , then once you get comfy they decide to sell the house out from under you. 2nd time in 10 years here. yay! im too old and fat for this crap.

Kegged 5 gallons of the Nottingham Centennial Blonde, OG 1.039, FG 1.005.

Racked the other 5 gallons of the US-05 Centennial Blonde onto 5lbs of strawberries, OG 1.039, FG 1.005. Will bottle it next week.

Brewing the White House Honey Ale. Lots of uncertainty as to what the ingredients were supposed to be, they call for "12 oz of crushed amber crystal malt" in the extract recipe. I bought "Amber Malt" which I believe from the receipt is Crisp Amber Malt. I tasted the steep of it and Biscuit and it tasted fine, a touch of bitterness which I expect to be offset by the 7.2 lbs of LME and 1 lb of Honey. Some used 60L and then complained it was too sweet.

We'll see, coming to a boil now.

Bottled a twofer of a recipe I felt compelled to dump a while ago, due to the gusher problems I was experiencing. HopSLAMber Amber Ale is in the bottles.

And I'm in the middle of the boil for what I call Raptor APA. Just a little experiment with Falconer's Flight hops.

brewed an APA used some rye in the grains this time, used the same hops as last time. so I can judge what the rye brings to the beer.
